Clean Eating Caramel

Sugar Freedom Week 4 Day 4

I found myself craving vanilla ice cream with caramel sauce today, and I immediately challenged myself (it’s becoming a habit again, yay!) to figure out a sugarless alternative.

Almost a year ago, I wrote a post about Clean Eating Caramel Corn. While this 2-ingredient caramel sauce definitely reigns supreme on popcorn, I wondered if it would work on ice cream, too. So I mixed up a little Super Banana Ice Cream, drizzled the caramel on top (after melting the ingredients together in the microwave), and dusted with cinnamon.

Mmmm … delicious.

My only complaint is that the caramel hardened too quickly. So just make sure the sauce is really hot before pouring over the ice cream. 🙂 Otherwise, get ready to enjoy the deliciousness!

Clean Eating Caramel


1 tablespoon honey

1/2 tablespoon nut butter (I used almond)


Melt ingredients together in a microwave-safe dish for about a minute. Stir until smooth. Drizzle over ice cream, popcorn, or other sugarless treat.


Progress Report Day 25

Breakfast: Chocolate protein pumpkin waffles drizzled with honey and dusted with cinnamon. 2 cuties.

Snack: Sugar-free hemp latte.

Lunch: Nut Thins. Dried fruit and mixed nuts.

Snack: Sunflower seeds.

Dinner: Stir-fry veggies with homemade shredded buffalo chicken. Honey cookie.

Snack: Super Banana Ice Cream with Clean Eating Caramel. Air-popped popcorn.
