{Project Recipe} Apple Spice Bread

I love bread. I love making it and I love eating it. However, I’ve been trying to find healthier recipes to satisfy this craving, especially during the holidays, when carbs and sugar reign supreme. This recipe for Apple Spice Bread from Martha Stewart caught my eye, with its apple flavor and cinnamon, nutmeg, and allspice thrown in for flair.

Now here’s where the Almond Roca makes the recipe really pop. Instead of making the glaze the original recipe suggests, I crushed about 6 pieces of Almond Roca and sprinkled the crumbles on top of the dough before baking. The pieces melted and created an awesome crust during the 70-minute baking time. It’s a great breakfast bread and could also work as an awesome Christmas present!

Apple Spice Bread with Almond Roca Topping

Ingredients

1 1/2 cups all-purpose flour
1/2 cup whole-wheat flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
Pinch of ground allspice
6 tablespoons softened unsalted butter
6 tablespoons light brown sugar
1/4 cup honey
2 large eggs
1 teaspoon pure vanilla extract
1/4 cup applesauce
2 apples

Topping: 6 pieces of Almond Roca

Directions

Preheat the oven to 325 degrees and grease a bread loaf pan.

Whisk together the flours, baking powder, salt, and spices. Set aside.

Use an electric mixer to fluff the butter and brown sugar for 4 minutes. One at a time, add honey, eggs, and vanilla, and mix until smooth.

With the mixer on low, add half the flour mixture, then the applesauce, then the rest of the flour mixture. Mix until smooth.

Peel apples and cut into small chunks. Turn off the mixer and fold apple pieces into the dough with a spatula.

Transfer dough to bread pan. Crush Almond Roca pieces and sprinkle on top of dough.

Bake for 1 hour, 10 minutes. Let cool 10 minutes before transferring to cooling rack.
